Thermomix Yoghurt

imageI’ve posted previously in this blog on the merits of making your own yoghurt, its a great way of ensuring you eat a clean product and is way cheaper than the store-bought version. My basic yoghurt costs just over $1.00 per litre and is super easy to make, even more so when you have a Thermomix.

The key part to making home-made yoghurt is getting the temperatures correct – no guessing here –  and if you want thick yoghurt, add powdered milk.

 

Thermomix  Milk Yoghurt

To make 1 litre

  • 1 Litre full cream milk (don’t go low fat, just eat less)
  • 1/3 cup full cream powdered milk (optional but it makes it creamier and thicker)
  • Dash of vanilla extract or vanilla bean – optional
  • 3 teaspoons sugar or sugar substitute
  • 3 tablespoons of good quality yoghurt to start it, after your first batch, you then keep reusing yours as your starter

Place all of the ingredients except the yoghurt into the Thermomix.  Set to 90 degrees and mix on speed 2 until the 90 degree indicator light starts flashing. This means its between 85 and 90 degrees. Dont walk away waiting for this, it will take around 5 – 6 minutes but you dont want to boil the mixture.

Cool the mixture to 45 degrees then add the yoghurt and mix through well.

I then pour my mixture into a smaller container inside a hot water bath in the round Thermoserver that comes with your Thermomix. Top up the water if you are in cold climates but leave it there for eight hours. If its summer, you can just pout into the Thermoserver and sit in a warm area for eight hours. The ideal temperature is 45 degrees.

Chill in the fridge before enjoying creamy home-made Thermomix yoghurt.

Add fruit or nuts for flavour when serving.
